This seasonal beer is a limited edition brewed for the short days and long nights of winter. The full body resulting from fermentation in ‘stone Yorkshire squares’ and the luxurious malt character, which will appeal to a broad range of drinkers, is balanced against whole-dried Fuggle and Golding hops with nuances and complexities that should be contemplated before an open fire.

 

Best served at about 51°F (11°C).

Swamp Head Brewing, Darkwater, Black IPA, Beer Geek Review 236

Blackwater Floridian Dark Ale is an American-style Black Ale at the low end of the IPA alcohol range (6.4% ABV), with an abundance of hop flavor and aroma. It represents what we consider to be an improvement on what are being called Black IPAs, or Cascadian Dark Ales, deriving its “darkness” from chocolate wheat malt rather than the bitter roasted barley used in most examples of this new style. The name is derived from Florida’s “Blackwater” rivers, which are dark in tannins from the native oak trees.

Blackwater was created through a collaboration between Head Brewer Craig Birkmaier and Eric Luman, Head Brewer at Jacksonville’s Green Room brewery. It was judged the Best Beer in Florida at the 2011 Best Florida Beer Competition.

Recently, some fresh picked, skunky, funky smelling green hops showed up at the brewery. It was HARVEST TIME. Each year, right around the time that the weather starts to cool, fresh sticky hops are picked off of the vine and sent to us overnight so we can use them in a “Fresh Hop” or “Harvest” ale. This is done quickly so we can use these little guys before they lose a single bit of their intensely dank aromas and flavors.

Stone Brewing, Suede Imperial Porter, Collaboration with 10 Barrel & Blue Jacket, Beer Geek Review 234

When Parisi and Stone brewmaster Mitch Steele decided to collaborate, it was essential that they tap a special individual to complete their triad of fermentation domination, and they found just that in Tonya Cornett, the brewmaster at Bend, Oregon’s 10 Barrel Brewing Company. Together, they decided on a sturdy yet velvety base of imperial porter and developed a plan to celebrate the bounty of the environs in which it was produced by harvesting avocado honey, jasmine and calendula flowers (some from our very own Stone Farms) and infusing them into the beer to create something complex and uniquely Southern Californian. Consider it craft cross-pollination at its finest.

Brewery Notes: Another brewery Favorite is our newly redesigned Robust Porter, Gaspar’s Porter. This dark and roasted dream of a porter weighs in at 6.1%ABV and contain 8 malts, including 6 specialty chocolate malts. This porter is our “Florida Porter”, a nice light to medium bodied porter with aromas of toffee and chocolate. To only then have your palate pillaged, by deep flavors of finely roasted espresso, velvety chocolate and finish with rich dark malt character. This beer also ages well for a few months adding more plum and licorice flavors to this already complex brew.

New Belgium Brewing Accumulation White IPA, Beer Geek Video Review 231

This winter, IBUs start accumulating like snow in Colorado with our new Accumulation White IPA. Brewing a white IPA was not only a way to salute the white beauty falling from the sky, but a direct revolt to the longstanding tradition of brewing dark beers for winter. At least that’s what our rebellious brewer Grady Hull likes to claim as he shovels in plenty of new hop varietals and a bit of wheat for a smooth mouthfeel. New Belgium Brewing, Paardebloem Belgian Strong Ale, Video Review 230

Using dandelion greens to bitter a Belgian-style ale blossomed from our brewers collaborating with Red Rock Brewing. These being our sixth interpretation together since 2008, expect a wonderfully complex ale fermented with wild Belgian yeast and blended with just a touch of wood-aged beer. Bitterness imparted from dandelion greens and grains of paradise will have you blowing wishes for sips.
